- Get stuck in making whipped tofu (it’s your next obsession – trust us), then top with grilled courgettes tossed in a vivid green herb dressing.
- Blitz peas, artichokes and lemon juice into a summery purée, then use it as a base for nutty new potatoes, crumbly ‘vegan feta’ and fresh mint.
- Knock up a saucy aubergine, chickpea and tomato bake – a dish you’ll want to recreate again and again.
- Watch Christina roast up spiced squash with crispy chickpeas, pistachios and sticky dates, topped with pomegranate molasses and tahini.

- You’ll work in pairs to recreate the dishes at your cooking stations

- You don’t have to be part of a pair to book. If you’re flying solo, you may be paired up with another person.
- The duration of the class includes teaching demos and hands-on cooking, as well as time to tuck into delicious dishes at our chef’s table.
- Only those who are actively taking part in a class are permitted at the Cookery School. Sadly, we are unable to accommodate spectators or provide a waiting area for friends and family.
