Transport yourself to the bustling streets of Bahrain (and beyond!), with the wonderful Noor Muard – chef and former head of Ottolenghi Test Kitchen – as your guide. Discover the rich diversity of Middle Eastern cooking and rustle up an epic spread that’s a joy to make and eat, using recipes from her hotly anticipated new cookbook, Lugma.
-
- Unlock the secrets to recreating Noor’s tomato and saffron rice, complete with a beautifully fluffy interior and gorgeously crispy bottom.
- Crush up loomi (black limes) with fragrant spices to make a flavour-packed rub, then use it to transform a spatchcocked chicken into a dramatic-looking centrepiece (we’re talking crispy skin, perfectly cooked juicy meat and happiness all-round).
- Get stuck in making a Springtime Fattoush – a vibrant salad with crispy Lebanese pitas, crunchy radishes and jewels of pomegranate, tossed in a lip-smacking sumac dressing.
- Discover Noor’s recipe for Daqoos – a sharp, slightly spicy sauce typically paired with rice dishes throughout the Gulf.
- Round off your evening with an Arab Mess – a reinvention of the classic British dessert that’s spiked with sumac, lime and pomegranate molasses, then topped with Persian candy floss!
