Join Santiago and his brother Eduardo to celebrate the release of his cookbook, Mexican Soul. We’ll take you beyond the familiar to Santiago’s unique approach to food: combining traditions, techniques and vibrant flavours of Mexico with British ingredients.

- You’ll work in pairs to recreate the dishes at your cooking stations

- You don’t have to be part of a pair to book. If you’re flying solo, you may be paired up with another person.
- The duration of the class includes teaching demos and hands-on cooking, as well as time to tuck into delicious dishes at our chef’s table.
- Only those who are actively taking part in a class are permitted at the Cookery School. Sadly, we are unable to accommodate spectators or provide a waiting area for friends and family.
Meet Santiago Lastra
Born in Mexico City and raised just south of Cuernavaca, Santiago’s culinary curiosity has taken him on countless adventures around the world. He has worked at acclaimed restaurants including Mugaritz in San Sebastián and Noma in Copenhagen, before helping to spearhead Noma’s celebrated residency in Mexico.
In 2020, he opened KOL in London, combining Mexican culinary traditions with beautiful British ingredients. The restaurant has since earned a Michelin star and cemented itself as a jewel in London’s culinary crown. Not one to rest on his laurels, Santiago followed it with Fonda in 2024, a laid-back celebration of the comforting dishes and warm hospitality of his home country.
Now, Santiago is bringing that same culinary passion to The Jamie Oliver Cookery School for a one-off class celebrating his debut cookbook, Mexican Soul.
