Traditional pie-making masterclass with Calum Franklin
Take a deep dive into traditional pie making with London’s King of Pies, Calum Franklin, as your guide. A self-confessed ‘pastry deviant’, Calum is the executive chef at the Holborn Dining Room, where he also launched The Pie Room – a one-stop destination for all things pies.
In this unforgettable masterclass, you’ll pick up the knack to kneading dough, discover the principles of pastry and practise the fine art of decorating, before putting your skills to the test with two perfectly formed pies.

- Watch the master at work: discover the secrets to making the perfect shortcrust pastry, hot-water crust pastry and two flavour-packed pie fillings during Calum’s interactive demos.
- Get a piece of the action: use Calum’s pre-made hot-water crust pastry and filling to create a traditional pork pie using a wooden dolly, which you’ll pop in the oven to bake.
- Nail the principles: fill, shape, line, crimp and decorate a handcrafted apple pie using Calum’s pre-made shortcrust pastry and filling, which our chefs will box up for you to bake at home.
- Aaaand relax: enjoy your freshly baked pork pie, alongside a glass of something special.

- You’ll work individually to shape, fill, crimp and decorate the pies at your cooking station.

- The duration of the class includes teaching demos and hands-on cooking, as well as time to tuck into delicious dishes at our chef’s table.
- Only those who are actively taking part in a class are permitted at the Cookery School. Sadly, we are unable to accommodate spectators or provide a waiting area for friends and family.
