- Discover Ben’s inventive take on a tortilla de papas: fry onions until sweet and caramelised, then use them as the hero in your omelette, backed up with a genius cheat ingredient (a humble bag of salted crisps) before dousing in aioli. Trust us, you’re going to want to try this
- Nail a fish recipe that’s so much more than a sum of its parts: gently bake a beautiful piece of paprika-spiked cod, then perch it on top of a bed of lemony yoghurt before adding lashings of a spicy chorizo and broad bean dressing
- Build THE green salad: a megamix of vinegary leaves, pickled shallots and soft herbs topped with a generous cloud of finely grated Parmesan

- You don’t have to be part of a pair to book. If you’re flying solo, you may be paired up with another person
- The duration of the class includes teaching demos and hands-on cooking, as well as time to tuck into delicious dishes at our chef’s table
- Only those who are actively taking part in a class are permitted at the Cookery School. Sadly, we are unable to accommodate spectators or provide a waiting area for friends and family
