Mix up the lightest, fluffiest sponge loaded with tropical fruits galore, then top it with zesty cream cheese icing, a dusting of pecan brittle and delicate edible flowers – it’s the perfect gift to take home for Mum. Or better still, bring her along to spend some quality time baking together (and take home a cake each!).
