A Masterclass in Modern British Cookery with Adam Byatt
Get ready for an all-star (get it) evening with chef and award-winning restaurateur Adam Byatt.
Adam, chef-owner of the Michelin-starred restaurant Trinity in Clapham, trained at some of the most illustrious restaurants in the biz, including Claridge’s, The Berkeley Hotel, The Square in Mayfair and The Worx. Not to mention he’s also worked with legendary chefs John Williams, now Executive Chef at The Ritz, and Phil Howard of Elystan Street, London.
Guests will learn how to make a French classic, leeks vinaigrette, by cooking the veg to perfection and whipping up a classic marinade, before moving on to Adam’s white wine-braised turbot (the ‘King of the Sea’, we’ll have you know) with a creamy, dreamy sauce. The class finishes with Adam’s guide to the ultimate hot chocolate pudding. There’s a glass of something fancy alongside too, if you fancy it.

- After watching chef Adam’s demonstration, you’ll set off on your own to sauté leeks to perfection (using his Michelin-starred trick for veggies) before re-creating his version of a classic French vinaigrette with Dijon mustard, fresh chives and white wine.
- Afterwards, you’ll learn Adam’s techniques for next-level fish cookery. You’ll gently simmer filleted turbot – using a special baking paper trick – until butter-soft, and then use the juices as a base to create an outstanding buttery, lemony, herby sauce that goes with just about any fish.
- To finish, you’ll make and then tuck into an oozy hot chocolate pudding (with a guaranteed molten middle). It’ll be served with Adam’s mint ice cream.

- The duration of the class includes teaching demos and hands-on cooking, as well as time to tuck into delicious dishes at our chef’s table.
- Only those who are actively taking part in a class are permitted at the Cookery School. Sadly, we are unable to accommodate spectators or provide a waiting area for friends and family.
