- 100g chapati flour, plus extra for dusting
- vegetable oil
- 125g red split lentils
- 1 white onion
- 1½ cm piece of ginger
- 3 cloves of garlic
- 1 fresh green chilli
- 250g tinned chopped tomatoes
- 1½ teaspoons turmeric
- 1 teaspoon ground coriander
- 1½ teaspoons ground cumin
- 1¼ teaspoons chilli powder
- 1 small bunch of fresh coriander (20g)
- 1 teaspoon caster sugar
- 3 teaspoons black mustard seeds
- 1 teaspoon fenugreek seeds
- 1 teaspoon crushed dried red chillies
- 5 curry leaves
- 75g white cabbage
- ½ a medium carrot
- ¼ of a red or yellow pepper
- ½ a lemon
- 1 teaspoon sesame seeds
- 100g tinned chickpeas
- mango purée or mango chutney
- 1 x 250g packet of cooked/microwavable basmati rice
